We are happy to reintroduce Mexico! However, this time you will find cocoa with hints of mild fruit, pecan, a bit of tart acidity, and a mellow sweetness.
This particular lot of beans comes from the Triunfo Verde Co-op located in the buffer zone of El Triunfo Biosphere Reserve, close to the Guatemalan border. The biosphere is located in the highlands of the Sierra Madre de Chiapas. El Triunfo Biosphere Reserve is one of the world's most diverse forest reserves. It is also home to Mesoamerica's largest continuous cloud forest, and it serves as a refuge to thousands of plant and animal species. An interesting fact, all the coffee they produce is shade-grown.
